When Dave and I lived on our farm in New Zealand it was a good hour and a half to the nearest town so their was no nipping to the shops to buy sweets or other goodies. We had to young children at the time and this recipe more than satisfies sweet cravings and provides a healthy alternative. The ingredients are all store cupboard so were usually to hand. Very simple and quick to make.

250 grams dried apricots, 125ml water, 125ml honey, 125 grams of chopped almonds, 125 grams of sultanas, 1 teaspoon of orange juice, 1 teaspoon of lemon juice, 1 teaspoon grated lemon rind, 16 tablespoons skimmed milk power, 1 tablespoon wheatgerm, 8 tablespoons of desicated coconut.

Heat the finely chopped apricots and water until apricots are tender. Remove from heat. Add remaining ingredients in order given.

With wet hands form mixture into 3 or 4 rolls. Roll in extra coconut.

Refridgerate for several hours, then cut in slices.
